This heirloom pepper treasure from Jamaica, is fruity and full-bodied. Named for the uniquely shaped fruits that resemble the famous “tam o’shanter” Scottish hat. This pepper is critical for the vinegar sauce in Jamaican Escovitch (escabeche). The thick walls of the pepper are well suited to long cooking times for making jerks and curries.

    Peppers prefer rich, loamy soil. You can easily get this soil type by tilling in an inch or so of good, organic compost. Be careful with nitrogen, though. Peppers react well to nitrogen, growing so quickly that they are more disease-prone and won't produce as much.
